Memorable afternooon at Castle View with PMD Tea
We were delighted to welcome Dananjaya Silva of PMD Tea to Castle View Windsor for a celebration of tea.
As one of the country’s leading experts, and a third-generation tea man, Dan brought a real passion for the subject, sharing stories from his family business and revealing some of the more surprising history behind the world’s favourite drink.
The afternoon began with iced tea served in gold-rimmed jugs, before Dan guided homeowners through two loose-leaf tastings: a single origin hand-picked Planters Afternoon to pair alongside alongside cream cheese and cucumber, and smoked salmon and dill finger sandwiches; followed by a Ceylon single estate from St Andrews with clotted cream shortbread and Stem & Ground ginger biscuits.
The teas were brewed in our white china pots and served at the tables by Dan and the Castle View team. It was relaxed, informative and, judging by the number of homeowners who have already asked when he can return, very well received.
A few tea tips from Dan….
- Use freshly drawn water for a cleaner, brighter-tasting cup.
- Give loose leaves plenty of space in an infuser or teapot so they can properly unfurl.
- Match the water temperature to the tea: black tea likes water straight from the boil, while green and white teas are best with cooler water.
- Don’t leave the leaves in for too long. A timer helps prevent a tea becoming overly bitter or tannic.
- Try a second infusion….good-quality loose leaf tea often has plenty more to give, with different flavours coming through each time.
